Are you the type to scrounge about your freezer in search of a frozen midnight treat? Here’s a quick fix you can whip up without the hassle of using an ice cream machine.

CLASSIC VANILLA GELATO

Servings | 12

INGREDIENTS

1 ½ cups sour cream
1 cup sweetened condensed milk
1 teaspoon vanilla extract or vanilla bean paste (or to your liking)

METHOD

  • Place all three ingredients in a bowl.
  • With a whisk, mix ingredients until smooth.
  • Pour mixture into a container and cover with a lid or plastic wrap.
  • Freeze for at least six hours or overnight.

And that’s all, folks! A creamy, silken, icy dessert for your snacking pleasure anytime, day or night.

TIPS

#1 Always use the best and freshest of ingredients. Anything made from dairy should be paid special attention to.

#2 If using cling wrap to seal the container, make sure the cling wrap is placed on the mixture to prevent ice crystals from forming.

#3 Serving tip – Remove gelato from the freezer at least 10-15 mins (if hot and humid kitchen, 5 mins is enough) to make it easier to scoop and serve.

VARIATIONS

This classic gelato recipe is the perfect blank canvas to make it your own by adding other flavours and textures like fruits, purees and nuts. Let’s experiment!

~ EVERYDAY FLAVOURS ~

CHOCOLATE – Add chocolate emulco/paste and vanilla. Serve with chocolate or caramel syrup drizzle and chopped nuts of your liking. Make it devilish with dollops of peanut butter that goes into the container with the mixture before freezing.

STRAWBERRY – Add strawberry essence and red food colouring gel. Or strawberry puree.

COFFEE – For this you can add whatever flavoured coffee paste and maybe a sprinkle of instant espresso or (again) the caffeine flavour of your delight.

~ ASIAN FLAVOURS ~

MANGO PASSIONFRUIT – Fresh chunks of ripe mangoes and mango puree mixed with dollops of passionfruit.

ROSE LYCHEE – Rose essence, pink gel food colouring (optional) and bite-sized portions of either canned or fresh lychee (make sure the fresh lychees are deseeded). Add a little bit of chopped raspberries for a tarty zing.

MALT CHOCOLATE – Mix Milo powder into the mixture. Serve with extra sprinkles of Milo.

KEY LIME – Key lime zest, key lime juice and crushed Marie biscuit or graham crackers.

~ UNIQUE FLAVOURS ~

RAINBOW – Add cotton candy essence/flavour. Divide mixture into different bowls. Add different gel food colouring. Pour coloured mixtures into container one by one and design it your way.

HOT BEEF BACON WITH MAPLE SYRUP – Chopped beef bacon baked with cayenne pepper. Mix with gelato mixture before freezing. Serve with maple syrup.

WASABI – Mix fresh or bottled wasabi paste into mixture. Add a bit of lime juice.

VEGAN OPTION – Substitute the sour cream with coconut cream (not coconut milk).
